Ingredients:

  • 1 Whole Suckling Pig (75 lb), thawed
  • ½ cup kosher salt
  • ¼ cup black pepper
  • ¼ cup paprika
  • 1 cup olive oil or melted butter
  • 10 cloves garlic, minced
  • 5 tbsp fresh rosemary & thyme, chopped
  • 3 lemons, halved
  • 3 cups apple cider or white wine (for basting)

Instructions:

1️⃣ Prep the Pig: Rinse thoroughly and pat dry. Generously rub the inside and outside with salt, pepper, and paprika. Stuff the cavity with lemons, garlic, rosemary, and thyme.

2️⃣ Let It Rest: Leave uncovered in the fridge overnight for crispy skin.

3️⃣ Slow Roast or Spit-Roast:

  • Oven Method: Preheat oven to 275°F (135°C). Place on a large roasting rack, baste with apple cider or wine every 30 minutes, and roast for 5-6 hours.
  • Spit-Roast Method: Secure on a rotisserie, cook over indirect heat for 5-7 hours, and baste frequently for maximum juiciness.
