Foolproof Braised Bison Osso Bucco Recipe:

Ingredients:

  • 4 pieces Bison Osso Bucco (1.5")
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 cup red wine
  • 2 cups beef or bison broth
  • 1 cup crushed tomatoes
  • Fresh rosemary, thyme, or bay leaf

Instructions:

  1. Sear the osso bucco: Season with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Sear the bison on all sides until browned. Remove and set aside.

  2. SautΓ© the vegetables: In the same pot, cook the onion, carrots, celery, and garlic until softened. Deglaze with red wine, scraping the browned bits from the bottom.
